Rhino cupcakes recipe:
Ingredients:
- 100g softened butter
- 100g golden caster sugar
- 2 large eggs
- ½ tsp vanilla extract
- 100g self-rising flour
For the buttercream:
- 150g softened butter
- 300g icing sugar
- 3 tablespoons milk
- 1 tablespoon vanilla extract
For the Rhino decoration:
- White fondant icing
- Black fondant icing
- Grey fondant icing
Method:
Step 1:
Preheat your oven to 180C / 160C fan / gas 4. Fill a 12-cupcake tray with cases.
Step 2:
Beat together, either by hand or electric whisk, the butter and caster sugar unit pale and fluffy. Next add in the eggs one at a time.
Step 3:
Add the vanilla extract and self-rising flour. Continue to whisk until combined and then evenly distribute in the cupcake cases.
Step 4:
Bake the cupcakes for about 15 minutes until they are a golden-brown colour. Once they are complete, leave them to cool on a wire rack.
Step 5:
Divide the white fondant icing into 12 2-pence sized balls and 12 1-pence sized balls. Firstly, take the larger balls and then roll these out to make a horn shape. These will be used as the larger front horn. Do the same with the smaller balls to make the back horn.
Step 6:
Take the grey fondant and divide it into 12 even sections. You will use half of one of these to make the face of the Rhino and the other half for its features. To make the face, take the halved section and roll it into a ball and flatten it to make an even circle. You can use a cutter to make this easier.
With the remaining grey fondant, take a piece and make a flat oval shape and hold it landscape. At the bottom of the oval, using a sharp edge make a smile by cutting a semi-circle shape which follows the curvature of the oval. Using a little bit of water, stick the oval onto the bottom half of the circle you previously made.
Step 7:
Take the horns you created earlier and stick them above the smile. The larger horn should be placed at the bottom, and the smaller horn at the top.
Step 8:
Using a blunt end make two indentations either side of the horns to create the nostrils, and two indentations for the eyes. Next, using some of the black fondant create two small circles for the eyes and stick them onto the indentations using a small amount of water.
Step 9:
Using the remaining grey fondant, create two small triangle shapes with rounded bases which will be used for the ears. Make a small indentation in each of the ears to give a 3D effect. Stick these onto the top of the face, directly above the eyes using a small amount of water.
Step 10:
Create the buttercream by whisking together the butter, icing sugar and vanilla extract until smooth. Slowly add the milk until creamy.
Step 11:
Spoon or pipe the buttercream onto the cupcake and then add the Rhino face on top.
Step 12:
Enjoy your Rhino cupcakes or share them with a friend!
